Huckleberry Restaurant’s Philosophy 

As we at Huckleberry shift our focus to new sights during this ever-evolving time, we wanted to share with our Bermudian community a bit more insight into how we choose to do things, and what we’re up to next. Here’s a quote on our philosophy from Head Chef James:

“Huckleberry’s cuisine interprets the concept of ‘nature’s generosity’ by celebrating the tril-ogy of fish, vegetables, and livestock, and seeking local ingredients as often as possible by partner-ing with Bermudian vendors. At Huckleberry we showcase great produce by growing as much of it as possible on our own properties and using only seasonally relevant ingredients in our dishes. We strive to be kind to the planet around us, with initiatives like our biodynamic wine sourcing program and our partnership with local apiary Passion Fields to stimulate bee populations. We believe in healthy and natural food, prepared to perfection.”

In the spirit of Huckleberry’s philosophy and Chef James’ words, resident mixologist Jordan Monkman has prepared a mocktail recipe that you can easily pull together with ingredients from your own garden (or your friend’s!) and pantry to pair with any of our new menu offerings. Spice up the recipe with your favourite tequila or gin for a refreshing take on happy hour. Take a look below for the full details. 

Bermuda Geranium Lime Mocktail

4 oz lime juice

4 tbs geranium syrup

Club soda or water

In a cocktail shaker, fill with ice, lime juice and syrup and shake until you feel the ice break up. Pour into a rocks glass, add club soda or water, garnish with geranium flower petals. Cheers! 

Geranium Syrup

1 cup sugar

1 cup water

1 geranium flower head – petals & 3 geranium leaves

Bring all ingredients to a boil, allow to steep for 5 mins. Strain and cool.
